Controling a fan with a thermostat

Hi, I wonder if anybody can help me.

I saw on the Jorge Cervantes ultimate grow vid a panel he had knocked up with a thermostat a rheostat and a humidistat to control his fans, does anybody know how the wiring of these works out?

don't know the wiring of all that. I use thermocubes to control my fans. they kick on at 80 and off at 72.

Thanks, I can't seem to get them where I live and their the wrong voltage.
