I was wondering how everyone dates the jars? Is it by the day you put it in the jar or are there other methods?

I dated a jar once, but when I tried to take off her top, she burped.... bud duh bump...
I print little 1" x 4" labels using Avery label software and stick them on the jars when filling. I always label with the strain name, harvested date and the number of weeks the plant was budding at the time of harvest.

In 2010 I chopped some stuff on 10/10/10 and put that date on the jar. In 2012 I think I chopped on 10/11/12 and put that on the jar. Other than these two dates, you should never do this. Unless you grew a sativa until 11/11/11 or 12/12/12. Those would be okay too should they ever roll around again during your lifetime.

Be sure not to write on the lids because lids get mixed up. We label ous with a label maker, year and strain. I used to put more info, but life to short.

A 2" x 2" piece of paper in the jar itself with the harvest and final lockdown sealed cure date. When the bud is gone so goes the paper and nothing is written on or stuck to your jars and you can use the paper for a scratch and sniff...

Date your jars but only if this is like a large grow and maybe you can't keep track of it all. Maybe you have pounds and that is hardly an easy feat if multiple strains are involved not to mention different harvest times may be in the mix too. Honestly growing that much sounds like a lot of fun, a lot of time to dedicate to those moments but worth the wait when you get premium buds in jars.

Also a damn good way to mark clones and phenotypes as well.
masking tape on the container, and a hanging plant id also.

and the information is exactly what i would want to see on my jars as well.
