Drying in 100% humidity.. Any advice from US Pacific NW growers?

I grow in an outbuilding that is not heated or sealed. I chopped and hung 2 plants last week, and the buds no longer feel wet or sticky to the touch, however they do not feel as "crisp" as the stuff I harvested in the summer and hung for 3 days from wet to dry.

So today I trimmed and jarred both plants. Should I plop it in the freezer for a day to "freeze dry" it the rest of the way, or should I just jar burp it to cure?

Any advice is welcome..

nahh just remember to keep them Jar`s open a few times a day for a 20 minutes time ..

or if still to wet use a cardbord box or paper bag for a day more of drying ..

EDIT: remember not to fill them Jar`s more then half, and keep em in the dark at around 70F

If you had large colas I highly doubt they are dry enough to seal in jars. At 100% humidity depending on temps also, you prolly should let them hang a bit longer otherwise risk of mold greatly increases unless you burp or leave jars open.

I don't have a huge yield on these plants, they each made maybe 3/4 of a quart mason jar.

I tossed the jars in the freezer this morning. I hope that will draw some of the water out, and then I will toss them in a paper bag for a couple hours and see how that works.
