In a good soil ph'ing water is pointless. The soil buffers the ph. As soil dries the ph swings to allow proper nutrient uptake.
That roots is enough to feed for a while. Don't feed it. Quit watering it.
Back to your statement. Why wouldn't the organic matter breaking down not happen fast enough? In a properly built soil you would have faster and slow releasing inputs.
You want to kick was in that root? Mix a cup of Espoma garden tone to a bag and a couple pounds of worm castings. Once a month add a pinch of garden tone and handful of castings.
If you really want it to kick ass charge up some bio char and mix in.
I've grown start to finish water only. A good soil mix only gets better with time.

What you call odd growth could be over feeding. I plant seeds straight to final pots in good soil. Sometimes I can tell its a bit much. It will cause funny growth.
