mmm...they both look good Brittany and Texas! I am so going to make this again and again. I get really sick if I don't eat something every couple of hours and this is perfect for that.

Here you go Silly String...I had a diabetic friend try them out. He ate one of my regular medicated cookies and his blood sugar was about 3 hundred something in the morning. He ate one of these and it was only 117 or 127 in the morning.

Diabetic Friendly Muffins.

3/4 cup Splenda (I use store brand)
1 cup canna butter
2 teaspoons molasses
2 large eggs
1/3 cup apple juice concentrate, thawed
2 teaspoons lemon zest
1 1/2 cups whole wheat flour
1/2 cup oat flour (i use my coffee grinder and grind whole oats until super fine like flour)
2/3 cup old fashioned oats (don't use the instant kind)
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon baking soda
1/2 teaspoon salt
3 diced bananas
10 large strawberries, small dice

Preheat oven to 350f...line your muffin tin with paper liners (for best results) or spray with non stick spray; set aside

Beat Splenda, cannabutter, and molasses at medium speed until light and fluffy. Add eggs, one at a time, beating until blended after each addition; add apple juice concentrate and lemon zest, beating until blended.

Combine flours, spices, soda, and salt; add to butter mixture, beating just until blended (beating too long will give tough muffins) then add oats and blend just until blended. then mix in strawberries and bananas the same way.

spoon batter into prepared muffin pan, filling 3/4 full. Bake until edges are lightly browned, 10 to 13 minutes. Remove to wire racks to cool.
