Help, my dried cured bud smells like hay!

If you over dry buds before putting them into jars then a proper cure cannot take place. Moisture is needed for fermentation and thats what curing is. Fermentation and the redistribution of moisture. Proper drying and curing techniques are more difficult to learn that growing the plant itself...........

sounds like a mold problem to me
