That top chart has gotten me out of a lot of jams. The bottom one is cool because it explains the deficiency a little more in depth. And what part of the plant it effects. Jorge is the man!

Absolutely if PH is off it will effect your plants ability to absorb nutes. Some alot more then other's as you can see below, ceartain nutrients are absorbed to your plant at different PH levels. I like to let mine drift just a little bit. There's no set number for PH. A lot of people will say there is an optimum level but as long as you stay pretty consistant and dont let it swing to far up or down your plant will adjust. In inert mediums or hydroponics PH should be monitored a little more imo.
When you grow in soil It kind of acts like a buffer.
