Let. It grow until most of the pistils have receded into the buds and the remaining turn amber look very carefully at the triches with a magnifier, if you don't have one get one, look for cloudy triches and a few amber, then you can flush and crop.
2 weeks for the weed, flushing is up to you. In soil with heavy chem nutes you want 2 weeks. With light feeding you don't need any flush. In hydro / soilless you want 4-5 days.
The tomato ripening is very dependent on light hours and temperatures. Might be a week or two.
