What signs can I look for to know that my little girl has gone into full-on veg mode? Should I be looking for a certain number of nodes or something like that?

I believe a plant is technically in a vegetative state as soon as it shoots up the first pair of leaves and starts photosynthesizing/growing.
However the term is broadly defined, it can also mean 18 hours of light, or as soon as the plant starts producing energy with cotyledons, etc.

Im currently growing 3 auto ak47's, my first ever grow. It was very obvious when mine entered what is widely termed the 'vegetative' stage of growth, it went from having two real leaves above the cotyledons to having four leaves with the beginnings of several more 24 hours later. What is being refered to as the vegetative stage as far as I can tell, is a plant that has moved on from its first two leaves into more full growth but has not been put on to 12 -12 lighting which would cause it to flower.

Sounds like I'm well into Veg then. I've got 6 leaves that are getting nice and big and two more just popped up overnight (still itty bitty though)
In fact, I think I'm going to go take a photo and update my grow log. She's getting pretty

The seedling stage finishes-up about 2-4 weeks after germination (breaking the soil). You'll know your plant is in veg when it starts having the crazy growth-rate that weeds have haha.
