I'm thinkin' about goin' indoors hydro & i'm wonderin' whether it would be better to go with many small plants or just one or two large plants? Any suggestions?

Unless you have feminized seeds, I'd recommend starting between 4 and 6 seeds(atleast). If you start 2 seeds ad both of 'em turn out male, you've just wasted all the veg time and electricity, nutes, etc. Chances are you'll get a couple girls from 6 seeds. Toss the males.

Any idea on how much lighting i'll need to sustain about 3 or 4 plants using the bucket method?

I'd go with an HPS if you have the funds. They're worth the money. But CFLs are always an option.

Hey JAZE..... if you are going to go hydro or aeroponic.. I would go all out and get great ventilation and a 1000 watt HPS... you can grow 4 plants your first time and then add some buckets for your second and third grow.. this will ensure atleast 1lb per grow... and you can keep tuning your system until you get 2lbs per 1000 watts :)

good luck
