Hysterisis is the adjustment of "when" a system should react to change. So, for example, my heater control for my tent is set to keep the room at 15 degrees. The controller could switch the heater on and off all the time, trying to maintain 15 degrees. This would knacker my heater. Instead, I set the hysterisis to 2 degrees. The heater will come on at 13 degrees, and then go off at 17 degrees. Therefore keeping it "around" 15 degrees with much much less switching on and off.
Same works for fans etc
