ANYTHING - as long as you don't heat the butter too much.

For Chicken Kiev I would think putting the butter on after cooking would make more sense.

I was thinking making the butter then adding garlic/parsley then chilling it into small log shapes. Then cutting a slit into the chicken and putting it in there. Flour, egg then breadcrumbs then shallow fry in butter.
 
Sounds really good - Give it a try and report back!

If you use leaves for flavor be careful - they have a STRONG flavor that could overwhelm other herbs & spices.
 
I'm even questioning the fried chicken thing. You can't fry chicken on a baking sheet used for cookies.

We fried it and put it back because it wasnt cooked enough but the outside was already getting dark in the oil
