Roux blanco with some milk and grated Swiss Emmentaler. Not a good time to take a pic, gets chewing-gummy fast when it cools and didn’t have enough milk (ikr… but yeah that happens, I’m anal about fresh milk). It’s topping for cauliflower casserole.

The grated golden cheese on top, dutch cheese, Reypenaer VSOP 2y/o costs aside from the beef mince more than the rest of the ingredients (whole cauliflower, potatoes, onions and cheese sauce combined). Ah and except butter, real butter getting pricey. This cheese is not meant for cooking but as candy to go with port. It just smells so good when heated (without getting stinky).

Scored a great deal on bay leaves to make up for it lol… 50gram (1 and 3/4 ounce) for 1.50. That gets me 2g, like 6 leaves at a regular supermarket.

Anyhoo… et voilà…

Definitely an improvement over last one, but next will be perfect.
 
I‘m slightly jealous of the cod. Used to get it almost weekly. Fish ’n chips without the chips. Yummiemouths we call them, translated verbatim. Chicken breast were a luxury then. Nowadays 1 pound of cod = 4 to 5 pounds of chicken…. that’s almost like pasta and wine at an italian restaurant, created by actual italians. Lots of fake cod these days, like pangasius, which is cheaper than chicken. I’m not liking the 21st century as much as I hoped. 3D-print me some proper cod already. Nom.

When working in England, they would under cook their bacon, so we would order it extra-extra crispy, which would be close to fully cooked but far from crispy.

In Spain, I seen this Spanish girl eat raw bacon...I freaked out, she said it's cured so it's safe......wrong, so dead wrong
 
I was friends with three Irish brothers that ran the "Big boats" in Kodiak - Paddy was known to comment "You Americans always burn your Fookin Bacon".
Our TV cooking chefs seem to like everything under cooked.... except for bacon.

Bobby Flay said "if you don't crisp up the bacon it will be sent back every time"

Personally, I can't handle a burger that's not fully cook.
These chiefs are trying to brain wash us to believe under cooked hamburger is okay, but I'm old enough to remember the "Jack in the Box" burgers that killed people.
