Hot smoking some Canadian Bacon that’s been curing in the fridge for 2 weeks. Smoked a brisket overnight with oak, and used the leftover coals for this (just added some fresh hickory). Brisket point will get eaten, flat will be thrown into a batch of chili tomorrow. It’s wrapped up and resting in a cooler - if I remember, I’ll take a pic later.

Coca cola beef. Well, Pepsi. All I could get. The onion lime zest Thai chili relish (no habanero either, lol) is the star of the dish. Most of the Pepsi hfcs ended up carbonized on the walls of my Dutch oven. Boo! Very tasty. Could be improved. Going with flour tortillas for the handling.20240225_174843.jpg20240225_174838.jpg

I agree with the choice of flour tortillas. The relish was necessary and not optional in my opinion, along with the coriander seed I added in some whole grain mustard and really enjoyed it. Thanks for reporting back

You know when you come to this thread (ba dum tsss, food porn joke) and you’re like damn now I’m hungry again…

I propose two possible solutions in addition to the tostis above:

single egg frittata:

and mushrooms caramelized in butter, sugar, and some ketjap manis (sweet soy) and 2 tsp of beef gravy

I made chicken noodle soup from scratch again tonight. For two reason’s. 1: It’s yummy af. 2: My wife said she wanted to take some to an elderly couple we know, but after having a bowl and then seconds she mentioned getting them some KFC ….. I don’t know quite how to take it. Did she love too much to give away or hate it too much to give away….either way I have lunches at work for the rest of the week so I’m okay.

P.S. I will make sure that couple gets something better than herb’s and spice’s.
