New and Improved TnT Foodie thread

Gonna do a meatloaf soon I think , heard too much good stuff about it . Also wanna try the biscuits and gravy thing , that looks like a bit of me that
When you do add hamburger, egg or two, stuffing mix or breadcrumbs, chopped onion, half cup ketchup in bowl mix then add to loaf pan or make into on sheet pan. Add cup or enough to cover top with ketchup. Might want foil on top to cook for 25 min then take off so ketchup carmilizes on top. Wait till you smell and taste.

I do the above & then like to wrap it in bacon & I use BBQ sauce (Sweet Baby Rays) instead of Ketchup.

Would that be comparable to what we call "Chicken Pot Pie"?

Chicken Pot Pie

Ingredients
  • 1 pound skinless, boneless chicken breast halves - cubed
  • 1 cup sliced carrots
  • 1 cup frozen green peas
  • ½ cup sliced celery
  • ⅓ cup butter
  • ⅓ cup chopped onion
  • ⅓ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon celery seed
  • 1 ¾ cups chicken broth
  • ⅔ cup milk
  • 2 (9-inch) unbaked pie crusts
Directions
  1. Gather all ingredients and preheat the oven to 425 degrees F (220 degrees C.)
  2. Combine chicken, carrots, peas, and celery in a saucepan; add water to cover and bring to a boil. Boil for 15 minutes, then remove from the heat and drain.
  3. While chicken is cooking, melt butter in another saucepan over medium heat. Add onion and cook until soft and translucent, 5 to 7 minutes. Stir in flour, salt, pepper, and celery seed.
  4. Slowly stir in chicken broth and milk.
  5. Reduce heat to medium-low and simmer until thick, 5 to 10 minutes. Remove from heat and set aside.
  6. Place chicken and vegetables in the bottom pie crust. Pour hot broth mixture over top.
  7. Cover with top crust, seal the edges, and cut away any excess dough. Make several small slits in the top crust to allow steam to escape.
  8. Bake in the preheated oven until pastry is golden brown and filling is bubbly, 30 to 35 minutes. Cool for 10 minutes before serving.

Ye basically mate I put pancetta and few odd herbs what I have around

Grilled the chicken breast in a little beef dripping then basted with butter just before it finished cooking .
Then using the same pan added cooked mushrooms id fried earlier , added white wine and cooked that down for a few mins .
Then added some chicken stock and reduced it down ( i ended up adding some flour in water to thicken it )Then seasoned it with chopped parsley , black pepper and small amout of salt oh and a bit of cayenne pepper
The red cabbage was done in sauce pan in a little butter , then towards the end of cooking added brown sugar and balsamic vinigar and the broccoli was steamed

Sorry i dont measure nothing just do it by taste

Ever notice, you're watching something on the tube. Family, couple of teenagers, some smaller kids sitting around the breakfast kitchen table. Now taking out the soy milk/lactose intolerant stuff, there's a quart size container of milk on the table and the Mom complains they've run out of milk. What family this size doesn't buy their milk by the gallon and have at least a gal or 2 in the fridge as backup? I mean one breakfast you'd probably run thru almost a gallon at a time, amiright? ;)
