OK so I've started Out with wedding cake, black domina, and blue cheese. They are right At 2 months old. When should I induce the switch to flowering ?

The hard work is just about to start. Assuming that this pic was taken at the end of the light cycle due to the drooping leafs. ... or you just over watered. Trellis up, defoil, and flip. Hard to tell how many times you topped, but you can set up a PVC framed net system pretty cheap.
 
How much light you got there? From what I see you're likely to need about 1,000w
Looks like 6 plants in 7 & 10 gal pots......ambitious for your first grow.
Now is a good time to flip, they're only going to get bigger.
