should i stop water

My last watering in a 1200 watt hps room that usually houses 4-5 plants in 5-7 gallon smart pots with mostly FFOF soil and is a steady 79 degrees and 40-50% RH is about 2 days before chop. With plastic containers 3 days. In hydro I have no idea.

You want pots to be almost dry but not dry, not wet but a little damp. If I have 7 days left before cut I will water two more times.
 
if you're doing hydro... empty the res and give them 2-3 days of dry-ness
if you're doing soil/soil-less medium... I stop my waterings about 3 days before I chop

you want the plant(s) to use up the excess moisture that they've stored in their stem and fan leaves... but you don't wanna wait so long that your plant begins to droop. I waited too long once, the plant began to droop badly, and it took almost 3 times longer to trim.
