It's only a pipe dream with this large of a goal.Off grid is still a bit of a pipe dream but I'm the guy who dreams while I'm awake- and I have a plan...
We'll revisit this in a few years.

I'd say 16 000 watts isn't off grid it's completely starting your own grid.
Batteries don't suck if you are running a DC product on them. They suck if you try to invert to ac.As I said, tie in with power company and sell the overages. Battery tech sucks
So you keep adding more at different angles instead of tracking the sun?Because the panel cost dictates buying another panel vs tracker cost

I went to school for engineering as well, but you don't sound like an engineer.
I don't even want to think how much a solar array off-grid for that setup would cost.
You cold easily figure this out with online calculators, or when you're willing to spend a chunk of change like the 100,000 dollar plus this system will cost, vendors are more than happy to talk to you and work out the fine details.

I got a quote, 20kw system is $20k or 99 includes install and grid hookup. Off grid is practically same price, but a new 20kw battery is another 20k.
So its more like $40,000. Plus tax im sure lol

Except for that system wouldn't come close to supporting your grow independently from the electric company. Although it would nice to offset your bill.

Theres no such thing as galvanized pipe..galvanized fence post sure...but if you had a clue you would know the difference.Look at DIY options for the mounts. A lot of mounts are mucho $. You can use galv pipe and specific hardware for this, for example.
