Howdy,
So I was preparing some rye berries to be loaded into the pressure cooker late last night. I had rinsed them several times, let them soak for 24 hours, boiled for about 25 minutes or so, then let them dry.
They came out looking pretty nice - well hydrated on the inside without being wet on the outside with a minimal amount of burst kernels.
I put them in a quart jar [with the lid unsealed and a bit loose] to be PC'd for 90 mins, but ended up hitting the hay before loading it in the pressure cooker.
Rye berries are the cheapest part of the tek, so its not a big deal, but my question to you is - are the grains still usable since they were left out, unrefigerated, overnight? They were in a mason jar with the lid left loose at room temp.
Would this make them contaminated? Could I still throw the jar in the pressure cooker and be in business?

Also ... I understand that letting the grains soak gives endospores a chance to germinate before whiping them out in the pressure cooker, but if im going to pressure cook for 90+ minutes at 15psi, how necessary is the soak / boil?
