Ok so I've decided not to defoliate.

Try it with cuttings side by side from the start keeping everything even and see for yourself. I've tried it and won't do it again unless it was for airflow then I'd fix my environment.

Once you trim a fan or water leaf, it's gone forever, they will not rejuvenate. They are the power/storage unit of the plant.
To defoliate in a tent might be needed, but otherwise, I wouldn't do it.
