This is how I do it, you'll need a rack so the bird isn't stewing in it's own juices. Also, I actually set the oven at 500, then cook the bird breast side down. After an hour and a half or so(this is with a 15 lb), I'll stuff the bird, flip it over and remove the foil to finish browning. Then I insert the thermometer. Make sure you have at least 5 cans of chicken stock and check the oven fairly regularly to replenish broth when needed. This isn't something you walk away from for an hour, or you'll burn the stock and set off smoke alarms...lol

Edit: I also add Thyme, Sage, Black Pepper, and Parsley to olive oil to rub the bird.

I've had a few dry one. I think it's what is used to inject,the way it was injected or didn't sit long enough before cooking. over the years we have tried some wierd stuff. my fav is the garlic butter. least fav was the Italian dressing it called for newmans own Italian dressing. gag.I've had deepfried turkey in peanut oil a few times and didn't really like it all that much...it was ok...I didn't cook it...it seemed dry to me...i dunno wtf they did wrong...I'd love to have a good deep fried turkey at some point...people say its awesome

If you want to try some delicious seasoning to spice up your Thanksgiving whatever, buy some Tony Chachere seasoning! Its the best!! Its cajun seasoning but I've yet to meet anyone that didn't fall in love and sprinkle that love on everything!

You really should be able to. Now I will say that since it is a Cajun seasoning based in NOLA its harder to find in certain areas outside of the south. But where I live, which is way up in Washington State, I was able to find it no problem. That might be your only issue but its worth a try! I promise! I put Tonys on EVERYTHING.

- 13 pounds whole turkey
- 1/2 cup butter
- 1 cup water
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Rinse turkey and remove giblets. Place turkey upside (breast) down in a roasting pan. Insert 1/4 cup butter inside the turkey. Place remaining butter in several pieces around the turkey. Pour water into the pan.
- Cook covered in the preheated oven 3 to 3 1/2 hours until the internal temperature of the thigh has reached 180 degrees F (80 degrees C).
