I have a 3 fan (30,000 btu) water cooled heat exchanger. My set up is :
Rez (pumped) to chiller to fan and water goes back to rez. Is this right or should I have: rez pumped to chiller back to rez and then another pump from rez to fan and back to rez

Pretty sure you have it correct.

Res -> chiller -> heat exchanger -> Res

I had considered DIY'ing a water to air cooler as well, but haven't had the need yet.

I do it the other way around and pump from res - heat exchanger/co2 gen - chiller- res.

but now that I think about it I may try it the other way. although this seems to work. my problem was I tried to do it with half inch tubing. didn't get nearly enough water flow. built a couple manifolds and it's good to go.
