Smoother, better designed, much larger hole for more air to go through, which makes the downstem larger also. Also there are a lot of glass on glass accessories that you just cant do with a rubber stop (o ring) design.
for example, this would not be possible with rubber stops

I've seen entry models for like 350-700. And custom fully worked ones go for like $900-$4000
