why does my harvistid bud not smell like bud!

I have heard of premature bud TASTING like grass clippings, but never smelling. Even very young bud smells like bud. Hopefully you do what korvette1977 said and cure the weed, you should do that after any harvest though.
yup...when i did my first run last year..only my last project really smelled like nice buddd the ones that left to mature to the very end. by the way back then i read about "terpenoids" or something like that..cant remember but its the chemical responsible for the buds taste and smell when growing. thats why i believe nutes like bud candy are used to enhance those "terpens" or however. its typically prioritized by strain i believe... BUT yesss.. does it smoke??...thats the real deal.also (not to go on an on) ive had some lovely smelling live bud and when i cut it smelled like nothing.(due to premature cut) and smelled when i crack the bud

Reasons harvested bud has grass/hay smell:

1) You harvested too early

2) You dried the bud too quickly (aim for 65-75°F & 60-65% RH,hang whole plant for about 5-7 days in said environment,then remove branches from main stalk and continue to hang for another 3 days,then do a dry trim and nug everything up and throw in paper bag before jar curing)

3) You did a wet trim


IME (15 years of it) those are the main reasons for bud to have a grassy/hay smell.

After looking at the pics,looks as if you picked to early.Always use a 60x-100x scope to check the maturation of the trichomes (I like 100% cloudy/milky or 90% cloudy/milky 10% amber....amber color signifies the trichomes have reached peak maturity and that the THC has degraded and converted to CBD...hence why I like 100% cloudy/milky or 90% cloudy/miljy 10% amber.

Also another sign other than just trichome maturation is swelling of the calyxes and a darker reddening of the hairs from a light orange to a darker orange/red aswell as the hairs receeding way back into the calyxes.

You'll get the swing of it,just takes time,dedication,and more runs under your belt.If I can help in any way,just LMK bro.

Grass smell comes from premature buds. That have not dried properly. Or if used gravity. That tends to trap chlorophyl in the buds. Luckily that's been banned.
Done right with a good strain will stink good regardless of cure.

What was your humidity at? For about 4 weeks my humidity was at 55-65 and i smelled nothing but grass and hay in my tent. When my humidity dropped down to 30-40 these last couple weeks i could smell the aroma of good bud. Curing should bring it back.
