Amount of blades per fan leaf represent the maturity of the plant.
As the plant goes through it's vegetative cycle, the blade-count will increase. Indica will reach around 7-9 blades per fan leaf, while a pure sativa can reach upwards of 13 blades per leaf. Hybrids will fall in the middle.
As the light cycle switches to flowering, the new growth will slowly decrease the blade-count. After you get down to on blade per fan leaf you are as deep as it gets for flowering, because then the new growth is centered around buds and not leaf production.
You pretty much flowered your mothers out for a month, but they will re-veg. You will notice new growth soon with multiple blades per leaf. Just gotta give it time.
As for the shock, best thing you can do is ride it out. Otherwise, over-correcting could make the problems worse. Regular water and a little bit of time should do the trick.
