What causes red stems?

You're probably fine. I always have plants with reddish/purplish tints to the stems and leave veins. I've never had a problem with it. Just give them some time. How's your watering/feeding schedule? Nutes?

Watering when the soil is dry.
Its in a 6 litre pot and I water it about 2 litres at a time.
Enough that a small bit drains out the bottom.

Overall the plant seems healthy.

It's in a cardboard box. The temp, because of CFL bulbs, is between 80 and 110.
Its 100-110+ just above the lights (heat rises)
Not sure what the temp is at canopy.
Humidity has been between 50 and 75
If my hygrometer is accurate.

I figured it was just genetics. Googling suggested magnesium deficiencies.

Canopy Should be 75-85, from what I read.
The cfl keep the ambient temp above the bulbs to about 90-100 with the box door open. With it closed more the temp is around 100-110
But it's noticably cooler below the bulbs than above it.
I don't have a way to get a lower temp reading with the thermometer I'm using. It's from my reptile tank and it's just taped to the lights wiring.. :/

I believe the plant temp is fine though. It doesn't have many signs of heat stress.
When I first added more bulbs I didn't realize the temp would spike. so after a few hours of the plant roasting, I noticed twisting leaves and corrected the problem.
It's been good since.

Some of the stems, since the start of growing, have been turning red. Only on the leaves, never the stalks.
Usually one of 3 things for me, Genetics is 1 main factor based upon stain, next is Neuts, usually cause I put more than I should, 3rd Water based upon temp and ph which as others have stated may lead to stress which in turns leads to stunt growth.

Shittake, peep Amazon for a laser thermometer. You can shoot it right at your canopy and read how hot a leaf is. I got mine off there for $15. Love the thing.
