All good, question what you don't know, that the only way to learn IMO.
When your internodes(leaf sprouting/ branching point) are close together, a result of ample light, it is easy to snap the stem rather than just bend it. When you feel they are ready, gently but firmly hold the central stem and about 2 inches up the stalk, or at the next internode, twist it to at least 90°, there are times i twist to a full 180° depending on how firm the stem is. When you twist the stem it stretches the plant fibers making them less prone to snap when bending them over. I don't lst till they have 5 or 6 nodes, then it's a 90° bend for the meristem and spreading out the satellite branches for air movement and light penetration
