I think im gonna sear it in a cast iron skillet that was built in the late 1800's (passed down through generations), and then roast it to finish.... otherwise, I think it will get tough. Although non of this local beef we've been getting has ever been tough..... AND it's free!

I'd Sous Vide it for an hour and a half, then pat dry, rub with butter, and rub some Montreal Steak Seasoning on it. Then throw it on a hot cast iron for a few minutes or so on each side. I'm hooked on that method anymore.

I have an old 1k watt hps that I bought new over 15 years ago and it still works and produces the same amount of light as it did, can LED's do this?

This ballast cost me 200.00 back then.. Led's to replace this light is going to cost me close to 1k dollars, how long will this last?

It's still hard to sleep on HID's when the start up and longevity is better then LED's..

I will figure out which way I go when I replace my setup soon, but Im starting to lean towards a digital ballast with an air cooled hood..
