I will observe that when I bought this bottle on release, it cost me $15.95. A sound CdP commanded $40, and next year I was happy to find the better clarets at $60-80. I sold my "real" Beaucastels (including five viciously-scrounged bottles of the incomparable Hommage à Jacques Perrin!) and those glorious '90 Bordeaux recently for good money. I quite recently re-inventoried the ruins of my cellar and am delighted to find I still have a coupla cases of '90 Hermitage left ... a wine I unrepentantly refer to as "the crotch sweat of God". I will open these only on occasions of high ceremony, and the fabulous condition of this old and maltreated second-stringer gives me a fine bracing confidence that the big boys will be worthy.
About the cellar: seven years ago i traveled with a few of my "in case of nuclear attack, drink this first" bottles to the 50th anniversary celebration of my parents. I was shocked and disappointed to find the '90 Margaux plainly cooked, and the '88 Guigal "La Turque" only passable. Lately though the bottles I've pulled, while plainly dented by the vicissitudes of imperfect storage during two summers during which my own life was in shards around my ankles, are beyond merely passable (including some rather modest domestics) and have regained a bit of poise. Their future seems to have brightened in lockstep with mine. cn

Fuck two tall can that i snuck from everone im not to drink any alcohal or tortillas or even wheat bread or rice.. Fuck that i ate two hambergurs and tacos for the last three days i cant take this diet shit no more fuck the high colesterol and lipids in my blood i cant do this ever fucken day.. I will go back on my diet and injections and pills tommorow i dont like this shit.. Im not even fat man what the fuck.. ?? Lolz okay i good whoo that felt good..

I ate almost an entire package of turkey bacon and three eggs for breakfast. I bought the turkey bacon because they handed me a coupon for it as i walked in the store. I had four pieces and then never touched it again until today. I figured it was about to go bad so id cook it all and save some. Then my lack of self control kicked in and i was dunking my 14th piece of turkey bacon in the last of my egg yolks. Ffs. Good thing i had a baseball game today to burn some of that off :):):)

I was talking to a friend about where to find a bowl of good pho in town. Soooo, this guy points me to this place that he says is the best in town. So i had the munchies last night and decided it would make a good brunch. Worst pho ive ever had. I never send food back but when she came out to ask how it was i told her it was gross, no flavour, almost no meat, no veggies except chopped onions, aaaaaand the noodles were under cooked and stuck together. Me and my friend got the exact same thing so we were both pissed. Two bites and we were outta there. Our bill would have been about 17 bucks but we didnt eat the food, any of it but i drank a coconut juice which i wanted to pay for. I tossed her a ten and she tried to give me change but i told her to keep it, it was a tie between not wanting to look like i was trying to rip them off and knowing it wasnt her fault the food sucked. Oh god, the place was totally empty besides us, i feel so bad for them. Ah well, we went and got some tofu pad thai and it made me think of sunni, leftovers later :):):)

Sucks man. Pho is so easy to do right, makes nonsense for somewhere to do it so badly.

I'm getting all excited. Got a big family dinner on Friday, including my gf, and my older brothers gf. Trying to work out a menu that will allow me to stay at the table. Uncapped budget baby! Only planned the starter so far. Fried prawn wontons, and park wontons, with a homemade plum sauce and sweet chilli sauce, and a tuna and salmon sashimi platter, with wasabi lime and soy. Other than that I don't know though. Given the weather, tempted to do a warm Thai fillet beef salad but seems a bit mundane. Really fancy using my sizzle pan. Nothing like having food served on the table spitting and hissing in the pan :-) that was my first memory of hong Kong, black pepper steak served on a sizzle pan straight out of the oven. Burnt my self to shit on that :-D such good eating though!

Aye, although tbh, i've always found rack of lamb a waste of money. You cna get just as good an experience from a lesser cut of lamb. Lamb is one of my all time fav meat becaue of how good you can make the cheaper cuts, not that they're in any way cheap. But personally, a leg steak done to perfection will easily match a rack, from my experience. I'm thinking of something more asian orientated. I FUCKING LOVE asian flavours :) Given the timing, i might actually be able to source myself some salt marsh lamb :o That stuff is the fucking bomb! Nothing i tasted while supplying the london michelin star gigs compared to salt marsh.

Ya but thats like saying that you can make skirt steak taste as good as tenderloin. Sure its true but how often do you get to eat tenderloin? Also rack o lamb looks great on a plate :):):)

I have always found the differences in beef to be very different to those of lamb. I'll always take a fillet of beef if its offered, but rack of lamb, nah, never does anything for me other than looks. Will always pick lamb leg steaks. Plus I'm very much one for taking the cheaper cuts and doing something good with it to make it as good as a more extensive cut. Oh, and I get to eat tenderloin most weeks, heck, when I worked as a butcher my 50 percent discount meant I ate it near every either night of the week :-D and if it was unsellable.tail ends, I'd get em for about 90 percent off, just so as to get rid of them. But yeah, with pork and lamb, i find ive always been able to easily match the tenderloin with over cuts if cooked right, but never with beef. I'd much rather seafood tbh, but know my family can be iffy. My brother has already told me he and his gf will fend for themselves, told him he could get fucked, he didn't have a say in the ,after :-D might do a trio of grilled marinated kababs. Beef, chicken, and lamb. Simple in substance, to keep them happy, they are notoriously fussy, but rock out with the marinades, and do some killer roasted veg and such. I love having cooking freedom :-)

Hes always on some other stupid fad diet or not eating some crap because he wants to get rid of the "heat" in his body by not eating foods that make you "hot" according to some stupid chineese chart. Wtf, hes tellin me he cant eat basil and onions and bread cause it will make his body hot when im cookin dinner.....get fuuuuucked! :):):)

I just love making my own mayonnaise!! Fresh batch tonight.

Once the mayo was whipped stiff, I proceeded to make one of my favorite dishes: Eggs Maledict. The mayo took the place of hollandaise (I make it with a generous sprinkle of tarragon, ~salivate~) and instead of ham (I mean, ham? really?) I used some smoked salmon. And poached eggs ... sooo worth the hassle of cooking them up.
This dish cries out for something light and white ... a pinot grigio perhaps, or a Chardonnay vinified in a bracing Chablis style. But instead I opted for something in a brewed malt idiom. Warsteiner touts itself as "a queen among beers", and for this fellow of Central European extraction, it tastes of zuhause. cn

Haha. Right on. Can't stand fussy eaters. Got a text from him this morning stating that both of them would absolutely not eat eggs, and that she would absolutely not eat any raw meat or fish and definately not any noodles, and was alergic to chorizo. The things that struck me about that was wtf kind of fussy eater do you have to be not to eat noodles, seriously, and also, i'm curious as to how one is alergic to chorizo. It's not the pork, because she eats pork happily, so what is it? So far as i can tell if there is genuine allergy issues, it is the spices, not being alergic to chorizo itself. There is a reason i don't like this girl :D sadly none of the family do lol.

Picking kuroi up from town tomorrow so gonna head into the chinese supermarket with her and put a basket of food down on the old expenses account :D

That looks great neer. Jarred mayo is plain offensive once you've had real fresh mayo. smoked salmon and egg is always a winner :)

allergic to chorizo :( sucks balls that right there, it's pork and spice maybe just not good with spice IBS or something?!. lamb is my favourite too, followed by duck. lap of lamb is just as nice a chops or rack if don right. same as belly pork is to tenderloin imo.

TTT your folks deffo get the best end of the deal. restaurant cheffing at home and they pay the bills. win win win

Nothing like home smoked :) At work we used to smoke all of our own stuff from bacon to salmon to ox tongues. Nothing else compares! And of course it tastes good because it just came out of the oven, fresh bread is to die for. The smell is chemically addictive! Should be a class A drug!

Got all my meat marinating for tomorrow :) Opted for chicken in honey and soy, and lamb rump in smoked parprika with cloves, corriander and fennel seeds :) Fried wontons with plum sauce and sweet chilli sauce to start, and kuroi is making up a cherry pie for deserts :) Can't wait. Gonna be fun seeing how my bro and his girl react. She's so fussy she won't eat anything soft, be it pasta, or mashed potato.

When my brother lived(for free) with me he was a pain in the ass because he has OCD or something and he takes hygiene to a new level,anyway he would complain non-stop that his fine steak dinners etc had a dog hair on the plate and really annoy the f*ck out of me over it,he would see hairs that weren't actually there and if they were his eyesight was better than mine,in the end I had enough of the whingeing so I would make sure there was absolutely no hair on the plate but I would put his dinner down to the dog who would lick the living daylights out of it and for good measure I would put the steak or whatever meat in my pants for a minute and sit down,he never figured out why I used to smile so much while he was spouting on about my dirty kitchen:)
