I cooked a nice filet med-rare on a hot gas grill a few weeks ago but the taste was pretty boring.
Salt and ground pepper rub b4 the grill.
Not sure where I went wrong.
Maybe the meat wasnt aged long enough? Average grocery store or high end/butcher? Ive had lots of average steaks from the supermarket. I also put butter on my steaks so that helps ;)

Aging could be the answer.
They were good tasting for years then something changed at that store.
Thought I was getting tired of steak but some restaurants still serve tasty cuts.

Oh ya, if its aged long enough and is like an inch thick or more cooked MR on a high heat there shouldnt be much more you can do. This is making me hungry again :):):)

There is more in the freezer but I doubt it could be aged once bought.

Made myself a pepper steak on the grill last night. pepper from the garden.
Ground round, diced medium pepper, salt, ground pepper, garlic powder and a few shakes of worcestershire sauce.
Mix in bowl, form in desired shape, let sit an hour, grill on a hot grill.
Heated up a little can of sliced mushrooms with butter on the side.

Summer treat.

Oh, if it came from the freezer that could be why too. Ice crystals form inside the meat and pierce the cell walls causing water to leak out. If your freezer sucks and freezes slow its worse, fast freeze makes less sharp crystals.

They were fresh from the store though I froze the others.
They look fine but should be used soon.

woah that's some NY strip NB ;)

i couldn't be bothered to do the risotto last night it was too hot, ended up doing a simple salad topped with tuna and roast pine nuts, little bit of balsamic and olive oil. still trying to eat less red meat. can't say i'm enjoying it mind...
