Look at this depth chart. 2x600w would cover more area, but 1x1000w penetrates deeper. Each has their advantage/disadvantage. Hope this helps!

They will be fine. You were not at that temp for long and the soil/roots take longer to cool than the air does . When you get into the 30's you see problems. A dedicated circuit for the grow is a must and you have corrected that. Also, maybe a small space heater with a thermostat as a backup...

I'm not a hydro guy, but check out this thread and post in here and I am sure wiimb or someone can help you. Maybe add in light cycle, temps, ph, res change schedule, etc. They look nice and healthy dude but I am guessing you need to up the nutes and light. Happy growing...
