When your seedlings get to about 8-10" tall (2-3 weeks, I reckon), you can then start cutting them back. Your seedlings won't be at sexual maturity just yet, so the plant material you cut from the seedlings won't be useful to make clones- just discard this material.
When your seedlings are sexually mature,
then you can take some cuttings which you will try to get to set root. Don't confuse 'sexual maturity' with 'showing sex.' Plants won't
show sex until they are flowered i.e. put in 12/12 light for a week or so.
Sexual maturity is reached when you start seeing 'preflowers' at the
nodes (the points on the mainstem where the leaf stems attach).

Early male and female preflowers can look very similar to one another- one giveaway of femininity is the little white hairs (known as
calyxes) growing out of the preflowers. The calyxes may not appear until you have the plant in flower for a week or so. However, the plant won't flower until it is showing preflowers at the nodes, so attempting to flower sexually immature cuttings won't work well.
