i do a mean 3 1/2 or 4 hour American style brisket in there, with just salt n cracked pepper

That’s quick! I usually run 5-6kg briskets and it takes 3-4 to get to the stall, then finishes in about 9 hours. I try to get wagyu and not wrap. If I can’t get wagyu, wrap in pink butchers paper at the 6 hour mark. Like you, just salt and pepper. People can’t believe that there isn’t a marinade on the meat.
I aim for around 250-275f in a Kamado Joe. Love barbecue!

if i used the wood chips and sat there with a beer i could do that,go longer,

the way i do it is at least 5-8 year aged jam tree logs(acacia),,the one they make DMT from the bark, hopefully a bit ends up in the meat

just joking the favour is better than the maple or oak chips

Tester time fast dried these sba x gg nugs. It’s sexy weed smells like grape and tinned beet root, grinds to an almost pinkish colour. Taste’s like beetroot and blueberry salad lol, there is something else there but I can’t describe it
