Fresh Lake Erie walleye wrapped with bacon on the BBQ @400 for 20 minutes or so. Great bites.
No bacon shortage here but 375g is $6.50.

I did a loin. Wet cure for a week. Then apple and a little pecan smoke.

I've done whole trout.
50/50 sugar and salt packed in and around the fish in a Ziploc bag. Maybe an hour or so. Rinse off all the sugar and salt in ice cold water and pat dry with a paper towel. Smoke....
