We call Canadian bacon ham but slice it up and call it Canadian Bacon so our American friends will pay 3x as much as they would for ham.
A cured pork butt would be a ham.

Forget the baby backs. The St Louis cut is where it's at.
St. Louis has mustard in the Bar-b-que? those look awesome! but my preference are baby backs that fall off the bone..i'm making myself hungry.

Nothing to do with mustard. Just the cut of the rib. The St Louis cut is the sparerib trimmed up nice and neat.
