I never did figure out the multi reply so I'm going to try to answer everything the best I can.
here we go....
these "problems" (ie mold) do happen, and is the biggest challenge to overcome in growing fungi...it comes with the environment they grow in (warm and humid).
This is why working in a sterile environment is important to get as many jars as you can to colonize and fruit before any mold strikes. You can try to remove the mold if its a small area that is infected but that normally only gives you a few more days to get you mushies picked before its garbage.

you mix the b.rice flour with moist verm and put into jars(jars need to have holes punched in the lid) after you pressure cook them and they cool, you inoculate them by squirting a tiny amount into the mixture with you spore syringe and then cover the holes with micropore tape and place into incubator.
check the pftek link for the process.
by ready I do mean colonized. the jars will become white with mycelium and are pretty soild. It won't resemble anything like rice. Again, the link with pics should clear up most of you questions.
incubator..again, check the link..it shows how to make one cheap. I'd make at least 2, one for jars, one for trays.

Once jars are ready and white, you open them up and dump them into a big ziplock and smash all the white mycelium up and add equal parts of moist verm. then spread that mixture in the small trays. This is just making a casing from a cake, increasing surface area, therefor increasing the amount of mushies.
So really theres only 3 environments..jars in incubation, trays in incubation, trays in fruiting chambers full of magic mushrooms.
I think as long as you grow a cubensis conditions are the same. dark and warm for incubation, slightly cooler and humid with some light for fruiting.
