Personally IMO with a good commercial pump (like the sunleaves 18w Durapump) you can run up to 6 (I run 5 gallon sport coolers) reservoirs with the 6 inch air stones. I added another stone to each reservoir from another pump for redundancy and of course for more air. These types of air pumps have an advantage to me because I can direct cool air at the inlet which helps to keep my res's cooler. Also to answer your question, yes you can have too much air, if your water looks like it's lightly boiling that's enough. On the other hand if your water is so turbulent that your roots are breaking or are being air pruned, that's too much. IMO it is pretty hard to have too much air, conversely if you can place your hand a few inches above your water level and can't feel water being "pooped" on your hand that is definitely not enough.
