Is it true, that if I don't water my plants the last couple days before harvesting, it speeds up the drying process by A LOT?

Yea, like just stop watering maybe 2-3 days before i harvest...

Yea i would do a thorough flush then stop watering till your soil is dry. I have noticed that when you do this the buds smell more potent but dry potent like if you handled the buds rough it would knock off all the trichs and goods. I do recommend a blend of a good flush and proper drying and curing process is the road to a beautiful harvest.

yes they dry faster but not really by that much.
