Eschew pork. It's like REALLY REALLY bad for you. Chicken and turkey.

Half soft shells, half hard shells. Variety is the key.

i know a guy... but the kangaroo sausage might be mixed with either horse meat or gueinie pig which ever is in season. noone sells pure kangaroo meat its a drought out there control da market by limiting purity and supply

My fav is actually fish tacos, preferably halibut or haddock, but talapia will do in a pinch!

I have tacos down to a science. Must have homemade salsa, creme fraiche (or sour cream), tortillas and guacamole or it's not even worth doing. lol

i will be using chicken meat, diced fine, seasoned well, browned with some onion and taco seasoning added at the end.

sort corn tortillas for the gluten free wife, hard corn tortillas coated with refried beans and wrapped in soft flour tortillas for me.

fix-ins will include mild chunky salsa, shredded cheese, green leaf lettuce, sour cream, and possibly avocado if the wife decides so.
