Idk what phone you have, but either way you should hold it still af ( especially in low light situations ), maybe place it on something. Also inside your camera app there should be manual focus adjustment. That way you can be more precise instead of waiting for the phone to understand the focal lenght and fuck it up lol

Idk man. I just set my phone to camera, point and shoot. Never have any issues. Just go further away until it focuses then move closer. Proof of concept attached
