Omelets are good, but I prefer a nice huge stuffed baked potato! And for a quick munchie fix, pizza rolls are the bomb. lol, sorry, I just semi hijacked the thread, I can't help it, all the food talk has got this stoner HUNGRY!

To make omelets especially yummy I seperate the egg whites from the yolks. Whip up the whites till fluffy then fold in the lightly beaten (and seasoned) yolks.
When they are cooked they are really light and fluffy.

I live in Maine. I made an omelette one morning that was fantastic. Had some lobsters left over from a big family feast. Lobster meat, cheese (not that cheap American crap either), a little onion. Mmmmmmm! I thought I had invented a new dish, and I sorta did since I hadn't heard of it before. Seen a couple restaurants offer them though.

Hey Crypt - tilamook's sharp ched or pepper jack. Kind of a boring answer but they're better than all the fancy stuff ever though the fancy stuff has it's place I can't put it in everything from eggs to tacos to crackers ya' know.

As for fluffy eggs...I mix my raw eggs with a dash of milk. Can't beat the fluff factor.
I'm gon'na go make some french toast right now as a matter of fact thanks for reminding me OP.

(and I'm so trying avocado on my next omlette - yum ak!)

What is that? Looks sort of like big ol pan of Yorkshire pudding with bacon in it.

If thats NOT what it is I'm still going to make some. :) I saw on a show last night Pancakes with either Bacon or Sausage right in it. Oh yea!
That may be a canadian thing. Bacon or Sausage with maple syrup.. oh yeah baby...

Mmmm, sounds good! Nah, not just a Canadian thing, I LOVE McDonald's McGriddles, which is basically a pancake type thing with maple syrup in it, with either bacon or sausage, egg, and cheese. THE BOMB.

What I use is one of those Braun handheld blender thingies. It has blades instead of whippers. Works real good.
