Last night i put the seed in a small cup of soil and i woke up to find 3 leaves sprouting out. IS that normal for it to sprout that fast? This is a nirvana short rider autoflower seed. Do i water it again today? Tomorrow i will be getting better soil, i read most people here transfer to a 1 gallon pot, i bought a 5 gallon pot. I am thinking i should go with 3 gallon, since it is an autoflower seed. I am really scared to transfer the plant.

Wait for the plant to get a little more stable and established before you transfer them.
But as far as your seeds sprouting its normal and be stoked man I have ten plants and its now day 3 and im still waiting for 7 of mine to still sprout

Your new sprout needs proper lighting to survive, inside AND outside. Assuming you planted the seed in moist soil, it won't need watering for several days, according to temps, ventilation, etc....pot should be light before you water .......overwatering is the fastest way to stunt and kill your plant.
BTW: I grow most of my autos in a 4" pot.... & never more than 1 gal pot. To each his own, but I grow some dank monster autos,

Cool i have read that this strain is not a real autoflower, something bout that it has a rudalis or whatever. it grows bigger then most autoflowers or something like that. I don't want to stick the cup outside, wind might knock it down.
