I’ve done lettuce and yes it was veryyyy good butterhead lettuce, but I wanna unzip a tent and pick a whole dam SALAD!
This why I'm here. I did this a few years ago and was successful for a while. Then, I changed soil and got infested with fungus gnats.
Took the whole set up down and now I'm starting over.
Was growing several different types of lettuces, cucumbers and dwarf tomato plants. Also, Tatsoi. Senposai, and few other Asian greens that did exceptionally well.
No pics, but I have grown navel oranges (two plants) inside that produced fruit. They were regular size plants that fruited when they were about 4ft. tall.
One thing to keep in mind is you have to manually pollinate to produce fruit, unless you have parthenocarpic or gynoecious plants;

Several types of cucumber and some kiwi have these traits. I've grown Socrates Beit Alpha cucumber (seeds from Fedco) indoors with no issues.
I don't remember the name of the nursery, if you search for dwarf Meyer Lemon or Eureka Lemon you'll find a few places that have dwarf fruit trees.
One place had Kumquat trees.
Good luck
