I have found if you saute kale or eggplant with a high grade extra virgin olive oil it slides right out of the pan and into the garbage.
Eggplant parmesan is one of my favorites. Kale with a honey/mustard vinegarette and pecans or walnuts is a great salad. Baba ganuche (roasted eggplant) is a fantastic dip or sandwich spread. All homemade of course.
