I have found if you saute kale or eggplant with a high grade extra virgin olive oil it slides right out of the pan and into the garbage.
Eggplant parmesan is one of my favorites. Kale with a honey/mustard vinegarette and pecans or walnuts is a great salad. Baba ganuche (roasted eggplant) is a fantastic dip or sandwich spread. All homemade of course.
 
Man even us Polish folks would not do that. And we eat some weird stuff like potatoes inside other potatoes and fried.......
We tried dessert pierogis yesterday from a Ukranian vendor at the market. They had cherries inside and were quite delicious- only boiled though. He makes the best cheddar/potato pierogis - boiled/pan fried with bacon and onions. His cabbage rolls too are fantastic.

Mom used to make them with cottage cheese inside - boiled with bacon/cream gravy or pan fried in butter. Called them varenyky.
