I have one set of shelves in my kitchen at home.. Man i frigging love damae ramen!

Also got a freezer full of prawns and squid and fish balls and wontons and such to throw in the noodles while they're cooking plus bought some frozen wonton wraps so that i can make my own :) Being a chef sure removes your ambition to cook at home. Will be quitting at the end of this month though in order to do some distance learning so lots of time for making yummy soups :)

Well dinner for me was spagbog with the parents and a brother and his godfather, rather entertaining :) and oh so tasty tasty. The tastiness was rather cancelled out by a couple of hours bored off my ass at church for my mums licensing service :(

I barbecued some baby back ribs with a new sauce. I was a little dubious but it turned out wonderfully. I baked some potatoes on the grill wrapped in foil with olive oil, sea salt, and some herbs. I also had a dandelion green salad with a cherry vinaigrette. The beverage was sparkling apple cider and dessert was apple pie with cherry ice cream on top.

I decided on Chili Beans tonight to combat a cold night. It took me about 3 hours to prepare.

3 cups pinto beans cleaned and washed
1 lb. lean ground beef
6 cup water
1 yellow onion
3 cloves garlic
28 oz whole stewed tomatoes
1 bay leaf
salt to taste (I use 1/2 to 3/4 Tbs. It just depends on your palate)
1/4 tsp. pepper
1 heaping Tbs. chili powder. Be generous.
1 Tbs. Olive Oil

First thing to do is clean the beans. Beans usually have all kinds of gravel and grit in them so it would be prudent to look through them and take out the detritus and bad beans.



After that, empty the beans into a colander and wash thoroughly.



Place beans in pressure cooker with 6 cups water and 1 Tbs. Olive Oil. Pressure on medium heat for 1 1/2 hours. If you pressure them on high the beans will scorch and you'll have to throw them out. You can't salvage scorched beans.



Time to start preparing your chili-meat mixture to blend with the beans after they are through pressure cooking. Chop your onions and mince your garlic.



Set your garlic and onions aside with a bay leaf



Measure out your spices and set them aside



I suggest you use a chili powder that doesn't have additives and other spices. You need pure chili powder. I use Bueno's Chimayo Special Reserve Chili. It's nothing but chili powder. No seeds or stems or additives. You can purchase it online if it isn't available in your area.



Heat up a pot and crumble your LEAN ground beef into the pot and brown thoroughly. The beef has to be lean (around 93 to 97 fat free). You don't want a lot of fat in this dish. After two or three minutes add the garlic, onions and bay leaf. Cook until onions are translucent and meat is completely cooked. Add chili powder and simmer for two to three minutes











Blend Tomatoes add to mixture. Cook for thirty minutes on a low to medium simmer



When beans are finished pressuring, remove lid and add chili-meat mixture with salt and pepper and cook for another 45 minutes. Once they are done serve with fresh rolls. I made mini-loaves of bread to go along with the beans.



I pulled the bread out of the oven and buttered the tops. I walked over to the opposite counter to grab the camera and....



Three were gone. No one was owning up but I saw several people sidling out of the kitchen with hands behind backs. Little shits.

General Tso's Chicken with zucchini and fire roasted green chili's over mushroom basmati rice. Going asian seeing as I'm high it suits the occasion.

Red chili pork tamales, refritos, and Spanish rice. Dessert was cinnamon rolls. I had some yeast dough left over from the bread I made the other night. After cooling I slathered them with a cream cheese frosting. The beverage was virgin Sangria.

As much as I admire and appreciate the natural grace and beauty of women, I heart me some burly men. I would sell my soul to be straight but it just wasn't in the cards. Besides, I'm old enough to be your fath... umm.. baby sitter. :p


We were gifted some t-bone steaks from a relative who has slaughtered a couple of cows and aged the meat to perfection. I broiled the t-bones with a marinade, crispy skin roasted potatoes, mixed peas and carrots with regular onions, spring onions, a touch of unsalted butter, sea salt to taste, and fresh ground pepper. I made some more mini bread loaves and marinated some mushrooms in unsalted butter, sea salt, freshly ground pepper and a touch of worcestershire sauce. Dessert was apple strudel.

Marinade

Meat tenderizer
Accent (flavor enhancer)
Butter salt (you can substitute butter buds if you can't find butter salt)
Lemon Pepper
garlic powder
onion powder
worcestershire sauce
soy sauce

Sprinkle dry spices on both sides of meat and then let set for five minutes. Cover steaks with equal amounts worcestershire sauce and soy sauce. Marinade over-night. Flip steaks every 2 hours. Your steaks are ready for cooking by whatever means you love the most. My personal preference is grilling outside with soaked mesquite chips sprinkled atop the charcoal briquettes. Adds a kick to the flavor. :p

The nephews and nieces were clamoring for burgers tonight so I made some cheeseburger sliders to shut them the FUCK up! :cuss:



No dessert tonight but we had virgin Sangria again for the beverage. I love that shit. I love it even better with wine. ;)
