Leds you linked arent better than your HPS setup. Don't buy ebay ripoffs from US, if you want cheap led boards buy them form china, customs are lower probably. Get official boards from US. You don't need one driver for each board.

i suppose youre going to connect sonoffs on the AC side, am I right? You could dim a mw driver with a transistor and a mcu. If there are free slots inside a sonoff that should be enough
