I grew up when fats were demonized. Unlearning that took some time.I think the proper recipe contains suet. That will fatten it up. Beef heart is leaner than 10%. It's all muscle.

Good idea. Or better yet use a smoker if you have one, and smoke the bison burgers. Smoked burgers kick ass and stay super juicy.Hickory and Gas.
