Why do you need to cut off an animals airway to achieve this. Again, unless you severe the spinal cord the animal is alive and alert during the process.

Even with arteries there will be severe bleeding but not compared to when the injury first happened. So right after the incision is made there will be a large gush of blood but it will slow down and the animal has 2-3 minutes of life left in it.
