I will be when that pork hits 203! The bread is meh. The yeast is more than a decade old and I should have went for 450 on my oven but was afraid I'd torch it so it went more sideways than up. There's also the kitchen that bakes bread. When you are constantly doing bread it raises better and handles better. Some is experience and some is you've inoculated your environment with yeast.
Sadly that's what stops a lot of people from baking bread. You've got to make a few loaves to get better at it. Even when your hands remember your air isn't as favorable. Yeah that's my story. Now where's that fucker
